About

Dr. Rebecca Brody is a Registered Dietitian and Professor in the Department of Clinical and Preventive Nutrition Sciences at Rutgers School of Health Professions, where she teaches in both the Doctor of Clinical Nutrition and MSCN graduate programs. She earned her M.S. and Ph.D. in Health Sciences from Rutgers University. Dr. Brody’s research centers on advancing nutrition
education and training for dietitians, health professionals, and students, with a particular focus on clinical nutrition and advanced practice. Her recent work explores the intersection of diet and mental health, as well as the emerging role of artificial intelligence in teaching and clinical simulation.

She currently serves as Chair of the Academy of Nutrition and Dietetics’ Ethics Committee and is a member of the Commission on Dietetic Registration’s Workforce Capacity and Demand Taskforce. Her prior leadership roles include service as a CDR Commissioner, member of the CDR Appeals Panel, and contributor to ACEND’s Advanced Practice Doctorate Expanded Standards Committee.  Blending clinical expertise with innovative pedagogical approaches, Dr. Brody is committed to preparing the next generation of nutrition practitioners and advancing the profession through education, scholarship, and service.

Research Interests

My early funded research and publications explored advanced clinical nutrition practice for Registered Dietitians. These studies were foundational in the profession of dietetics and contributed to the development of the Advanced Practice Credential in Clinical Nutrition, sponsored by the Commission on Dietetic Registration.   My later research emphasized areas of nutrition practice to understand and expand the scope of practice of dietitians (nutrition-focused physical examination training and dysphagia screening training) both nationally and internationally (funded).

My international training efforts have led to scope of practice changes through the Ministries of Health in Israel and Malaysia. Additionally, I have mentored numerous graduate students on clinical nutrition research topics and food insecurity. I received funding to investigate the psychological constructs of grit, growth mindset, well-being, and resilience in students in health professions. Additionally, I am collaborating with mental health professionals in developing a research agenda exploring the connection between diet and mental health disorders (funded) and using innovative AI pedagogy for health professions education.

Recent projects include  building an AI-generated virtual hospital simulation (RU Virtual Health Care Simulator www.shp.rutgers.edu/vhs) and custom GPTs for faculty to use to create clinical simulation and role-play activities for their health professions’ students;  creating a hospital simulation, Prairetown Regional Medical Center to teach students leadership and change management with a nutrition lens; and developing chatbots to role-play complex scenarios of withdrawing or withholding artificial nutrition and hydration, and counseling individuals about diet and mental health.
